250g Molokhia (Jute leaves), finely chopped (fresh or frozen)
2 chicken thighs or 250g chicken breast, skinless and boneless
500ml chicken broth
1/2 (80g) large onion, halved
2 cloves garlic, minced
1/2 (3g) tablespoon ground coriander
1 (14g) tablespoon olive oil
40g fresh coriander, finely chopped
1/2 (1.5g) teaspoon ground cumin
1 bay leaf
Salt and pepper to taste
Juice of 1/2 lemon (to serve on the side)
1/2 (80g) Avocado, on the side
Preparation Steps
Prepare the Chicken:
In a medium pot, place the chicken, halved onion, bay leaf, salt, and pepper. Cover with water and bring to a boil. Reduce heat and simmer until the chicken is fully cooked and tender, about 30-35 minutes.
Remove the chicken from the broth, let it cool slightly, then shred the meat into bite-sized pieces. Reserve the chicken broth.
Cook the Molokhia:
In a large pan, heat the olive oil or ghee over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Add the ground coriander and cumin, and stir for another minute.
Pour in the reserved chicken broth and bring to a simmer.
Add the chopped Molokhia to the broth. Stir to combine and let it simmer for about 10-15 minutes, or until the Molokhia is tender.
Combine and Season:
Add the shredded chicken to the Molokhia mixture and stir to combine. Simmer for another 5 minutes to heat through.
Stir in the finely chopped fresh coriander and adjust seasoning with salt and pepper to taste.
Serve:
Serve the Molokhia hot, with lemon juice squeezed over the top just before eating.
Serve with half the avocado on the side with lemon juice squeezed and a pinch of salt and pepper.
