Keto Skillet Creamy Spinach Salmon

Ingredient List

Instructions are for 2 servings:

  • 2 salmon fillets (about 125g each)

  • 1 tablespoons olive oil

  • 2 tablespoons butter

  • 2 garlic cloves, minced

  • 2 cups (30g) fresh spinach

  • 1/4 cup (80g) whipping cream

  • Salt and pepper to taste

  • Lemon wedges for serving (optional)

Preparation Steps

  • In a large skillet, heat olive oil over medium-high heat.

  • While the oil is heating, season the salmon fillets with salt and pepper.

  • Place the salmon fillets in the hot skillet, skin-side down if applicable. Cook for 3-4 minutes on each side, or until the salmon is opaque and flakes easily with a fork. Remove the salmon from the skillet and set aside.

  • In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

  • Add the fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.

  • Pour the heavy cream into the skillet, stirring to combine with the spinach and garlic. Let it simmer for about 1-2 minutes until the sauce thickens slightly. Season with additional salt and pepper to taste.

  • Return the salmon fillets to the skillet, spooning some of the cream sauce over the top. Let them warm through for about 1 minute.

  • Serve the salmon fillets on top of the creamy spinach sauce, and garnish with lemon wedges if desired.
