Instructions are for 2 servings:
2 salmon fillets (about 125g each)
1 tablespoons olive oil
2 tablespoons butter
2 garlic cloves, minced
2 cups (30g) fresh spinach
1/4 cup (80g) whipping cream
Salt and pepper to taste
Lemon wedges for serving (optional)
Preparation Steps
In a large skillet, heat olive oil over medium-high heat.
While the oil is heating, season the salmon fillets with salt and pepper.
Place the salmon fillets in the hot skillet, skin-side down if applicable. Cook for 3-4 minutes on each side, or until the salmon is opaque and flakes easily with a fork. Remove the salmon from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
Add the fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.
Pour the heavy cream into the skillet, stirring to combine with the spinach and garlic. Let it simmer for about 1-2 minutes until the sauce thickens slightly. Season with additional salt and pepper to taste.
Return the salmon fillets to the skillet, spooning some of the cream sauce over the top. Let them warm through for about 1 minute.
Serve the salmon fillets on top of the creamy spinach sauce, and garnish with lemon wedges if desired.
