Keto Eggs "eyes" with Spinach & Cheese

Ingredient List

  • 2 large eggs

  • 1 tablespoon butter or olive oil

  • 28g cheddar cheese, sliced

  • 15g baby spinach

  • salt and pepper, to taste

  • 1 Ketolicious flatbread

Preparation Steps

  • Heat a large skillet over medium-high heat with butter or olive oil.

  • When hot, crack the eggs directly into the pan, season with salt and pepper, and cook to your liking. Cover the pan with a lid, or flip the eggs after a few minutes and cook for another minute.

  • Remove the cooked eggs from the pan and place them on a plate.

  • Add the spinach to the same pan and season with salt and pepper to taste. Fry until the leaves are wilted.

  • Add the spinach and slices of cheese to the plate with the eggs.

  • Serve with Ketolicious flatbread.
