Ingredients are for 2 servings:
250 g salmon, boneless fillets (2 pieces)
50 g butter, thinly & equally sliced, divided
1 tablespoon olive oil
0.5 teaspoon sea salt
1 lemon, sliced thinly
Freshly squeezed lemon juice from 1 small-sized lemon
ground black pepper
1 teaspoon parsley, chopped (for decoration)
Preparation Steps
Preheat the oven to 200°C and grease a large baking dish with olive oil.
Place the salmon, skin-side down, in the prepared baking dish. Top each fillet with lemon slices and place a thin slice of butter on each lemon slice.
Bake on the middle rack for 20-30 minutes, or until the salmon is cooked through and flakes easily with a fork.
In a small saucepan, heat the remaining butter until it starts to bubble. Remove from heat and let cool slightly, then gently add some lemon juice.
Sprinkle the chopped parsley on top of the salmon pieces and serve with the lemon butter.
