Garlic Lemon Chicken Skewers

Ingredient List

Ingredients are for two servings:

  • 400 grams boneless, skinless chicken breast, cut into bite-sized pieces

  • 2 tablespoons (28g) olive oil

  • 2 tablespoons (30g) lemon juice

  • 2 cloves garlic, minced

  • 0.5 teaspoon (1.5g) ground cumin

  • 0.5 teaspoon (1.5g) paprika

  • 0.5 teaspoon (1.5g) ground coriander

  • 0.5 teaspoon (1.5g) ground black pepper

  • Dash of ground turmeric

  • 1.5g salt

  • Fresh parsley, chopped (optional for garnish

Preparation Steps

  • In a bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, paprika, ground coriander, ground black pepper, salt, and ground turmeric. Mix well.

  • Add the chicken pieces to the bowl and toss to coat them evenly with the marinade. Let it sit for a few minutes while you prepare the skewers.

  • Thread the marinated chicken pieces onto skewers.

  • Heat a grill pan over medium-high heat. Once hot, place the chicken skewers on the pan and cook for 5-7 minutes on each side, or until the chicken is fully cooked and has a nice char.

  • Garnish with freshly chopped parsley if desired and serve immediately.

  • Optional - Grill some zucchini, tomatoes, & bell pepper as a side dish
