Ingredients are for two servings:
400 grams boneless, skinless chicken breast, cut into bite-sized pieces
2 tablespoons (28g) olive oil
2 tablespoons (30g) lemon juice
2 cloves garlic, minced
0.5 teaspoon (1.5g) ground cumin
0.5 teaspoon (1.5g) paprika
0.5 teaspoon (1.5g) ground coriander
0.5 teaspoon (1.5g) ground black pepper
Dash of ground turmeric
1.5g salt
Fresh parsley, chopped (optional for garnish
Preparation Steps
In a bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, paprika, ground coriander, ground black pepper, salt, and ground turmeric. Mix well.
Add the chicken pieces to the bowl and toss to coat them evenly with the marinade. Let it sit for a few minutes while you prepare the skewers.
Thread the marinated chicken pieces onto skewers.
Heat a grill pan over medium-high heat. Once hot, place the chicken skewers on the pan and cook for 5-7 minutes on each side, or until the chicken is fully cooked and has a nice char.
Garnish with freshly chopped parsley if desired and serve immediately.
Optional - Grill some zucchini, tomatoes, & bell pepper as a side dish
