Salmon with Lemon & Butter  - Keto & Gluten-Free Recipe

Ingredients

INGREDIENTS ARE FOR 2 SERVINGS

  • 250 g salmon, boneless fillets (2 pieces)

  • 50 g butter, thinly & equally sliced, divided

  • 1 tablespoon olive oil

  • 0.5 teaspoon sea salt

  • 1 lemon, sliced thinly

  • Freshly squeezed lemon juice from 1 small-sized lemon

  • ground black pepper

  • 1 teaspoon parsley, chopped (for decoration)

Preparation

Instructions are for 2 servings.

  • Preheat the oven to 200°C and grease a large baking dish with olive oil.


  • Place the salmon, skin-side down, in the prepared baking dish. Top each fillet with lemon slices and place a thin slice of butter on each lemon slice.


  • Bake on the middle rack for 20-30 minutes, or until the salmon is cooked through and flakes easily with a fork.


  • In a small saucepan, heat the remaining butter until it starts to bubble. Remove from heat and let cool slightly, then gently add some lemon juice.


  • Sprinkle the chopped parsley on top of the salmon pieces and serve with the lemon butter.
